Officially called Sauvignonasse, this lean, dry, herbal white is often mistaken for Sauvignon Blanc. You’ll find it in abundance in Northeastern Italy in Friuli-Venezia Giulia. Pairing: A great choice alongside salads and roasted green vegetables. This is one of the few wines that can stand up to challenging pairings like green beans, artichokes, cabbage, and Brussels sprouts. Profile (Wine Folly): Dry, Light Body, None Tannins, High Acidity, 11.5–13.5% ABV. Serving: serve at 45–55°F / 7-12°C; white-wine glass; no need to decant; cellar 3–5 years.
