Verdejo

An herbaceous white wine that grows almost exclusively in the Rueda region of Spain. Not to be confused with Verdelho, a Portuguese grape used primarily in Madeira. Pairing: A great food wine due to its higher acidity and subtle bitterness acting as a palate cleanser. Try it with fish tacos, lime chicken, carnitas, or seitan steaks. Profile (Wine Folly): Dry, Light Body, No Tannins, Medium-high Acidity, 11.5–13.5% ABV. Serving: serve at 38–45°F / 3-7°C; white-wine glass; no need to decant; cellar 3–5 years.
